Chicken in Brown Sauce

Traditional Minas Gerais dish made with free-range chicken and its own blood, resulting in a dark and full-bodied sauce.

Ingredients

  • 1 free-range chicken
  • Chicken blood
  • 2 onions
  • Garlic to taste
  • Salt and pepper

Preparation

Season chicken with garlic, salt and pepper. Reserve blood mixed with vinegar. Fry chicken pieces until golden. Add onion and sauté. Add blood at the end and stir well.
