A classic that cannot be missing from the mineira table! Creamy, flavorful, and perfect when accompanied by rice, collard greens, and cracklings.


Ingredients

  1. 2 cups of cooked carioca beans
  2. 1 cup of bean broth
  3. 150 g of diced bacon
  4. 1 calabresa sausage sliced
  5. 1 medium onion chopped
  6. 3 cloves of garlic chopped
  7. 1 cup of manioc flour
  8. Chopped green herbs to taste
  9. Salt and black pepper to taste
  10. 1 tablespoon of oil


Preparation method:

In a blender, blend the cooked beans with the broth until a smooth cream forms. Set aside.

In a pan, fry the bacon until golden brown.

Add the calabresa sausage and fry until golden.

Add the onion and garlic and sauté until soft and fragrant.

Pour the blended beans into the pan and stir well.

Gradually add the manioc flour, stirring constantly, until you achieve a creamy and firm consistency.

Adjust the salt, finish with chopped green herbs, and serve hot.
