A soft, moist cake full of flavor — the kind that scents the whole house.
Ingredients
- 500 g of raw grated cassava
- 3 eggs
- 1 cup of sugar
- 1\/2 cup of melted butter
- 200 ml of coconut milk
- 50 g of grated coconut
- 1 tablespoon of baking powder
Preparation method:
Preheat the oven to 180°C.
In a bowl, mix the eggs and sugar until a light cream forms.
Add the melted butter and mix well.
Add the grated cassava, coconut milk, and grated coconut.
Mix until a homogeneous batter forms.
Finally, add the baking powder and mix gently.
Pour into a greased pan.
Bake for 40 to 50 minutes, until golden.
Let it cool a bit before cutting — it tastes even better warm.
