That thick soup, perfect for cold days or to gather the family around the table.
Ingredients
- 2 cups of cooked carioca beans
- 150 g of diced bacon
- 1 calabresa sausage in slices
- 1 medium onion, chopped
- 3 cloves of garlic, chopped
- 1 liter of the bean cooking broth
- Chopped green herbs to taste
- Salt and black pepper to taste
- 1 tablespoon of oil
Preparation method:
In a blender, blend the cooked beans with part of the broth until a smooth cream forms. Set aside.
In a pan, heat the oil and fry the bacon until well browned.
Add the sausage and fry until golden and fragrant.
Add the onion and garlic and sauté until soft.
Pour the blended beans into the pan and add the remaining broth.
Stir well and cook over medium heat for about 15 to 20 minutes, until slightly thickened.
Adjust the salt, finish with chopped green herbs, and serve hot.
